Halal chicken with rice. I used a whole (hg, of course) chicken, parted out — drumsticks, thighs, and breasts all separated. It took longer to cook than I thought. Otherwise I did everything according to the recipe and/or my previous post. It was extremely delicious.
Leftovers: pasta, soup etc.
In my freezer sweep the other day, I grabbed a baggie of frozen slow-roasted tomatoes and a little jar of pesto, and hucked them in the fridge to thaw for an easy weeknight meal.
