A homegrown pork steak! Pan-seared and then -roasted, and topped with homemade red pepper jelly made from Betsey’s (Laughing Crow’s) red peppers. Finally had carnitas! After failing to do so the last couple of days. I think the meat benefited from having sat in its cooking juice in the fridge for a few days, in the same way that a soup will often mellow and meld and be tastier the next day.
