The first of likely many iterations of ground beef and sauerkraut soup!

We had a bad (mean, misbehaved) cow who went to freezer camp, resulting in at least 100 lbs of ground beef, and I also accidentally made like 3 gallons of sauerkraut (from Laughing Crow cabbage and onions) this year. So this winter will be [...]

I have been eyeing this duck with root veggies and sauerkraut recipe for a while, and I managed to take a duck out of the freezer earlier this week, so I assembled this while G. was at welding college and I worked at home.

Homegrown duck, carrots and beet; Red Dog Farm shallot; Laughing Crow [...]

Friend H. came over to hang out and have dinner. She brought Island-grown venison sausage, and we served it with boiled Laughing Crow potatoes and homemade sauerkraut made with Laughing Crow cabbage and onions — basically all of which H. helped grow, as she worked there last season. Served over spaetzle made with homegrown eggs and goat milk, and storebought organic flour. Thanks again, [...]

This meant that I had time to walk [...]

Kitsap ground beef, Laughing Crow onion, Laughing Crow cabbage home-fermented into sauerkraut, etc. Homemade spaetzle with organic flour, homegrown eggs, homegrown milk.

Served also with homegrown kale sautéed with homegrown/Laughing Crow garlic and a bit of Island-grown home-smoked ham for seasoning.

Leftovers. I have never had Hamburger Helper but I wonder if ground beef paprikas with sauerkraut and spaetzle is sort of like Hamburger Helper. Except awesome. It made excellent leftovers.

A couple of weeks ago we made sauerkraut with 25 lbs of cabbage (minus one cabbage, which didn’t fit). Today I deemed it edible and jarred it up. I don’t process it, just put it into jars and put them in the fridge. The cold stops, or at least slows, the fermentation. We just finished [...]
