My current cook-like-you’re-single favorite meal is:
2 oz penne or similar fat pasta (not spaghetti), cooked
~1 Tbsp diced local shallot
1 can locally-fished albacore tuna
buncha capers from the organic capers jar in the fridge, plus caper juice
as many homegrown tomatoes as seems appropriate, chopped
a big drizzle of olive oil

We processed chickens last weekend and on Sunday night we did a simple salt-and-pepper, butter-basted roast chicken (425º until done). Still in Texas, but going home tomorrow, so time to use up all the food. I ate my tomatoes sliced on a plate with salt and pepper and olive oil; some bread with the last of the mushroom pesto; and the last of the pork mushroom barley stew.
Leftover spaghetti sauce from the other day.
Spaghetti! With sauce made of a pound of ground beef, two quarts island tomatoes, and probably some onions and garlic. Storebought pasta because my pasta-making station is still full of other crap, :( . After reducing a bunch I froze a pint of the sauce for another day.
