On Wednesday I thawed a roast of some kind, sliced it, and browned it in a hot pan. I threw it in the crock pot with a baggie of frozen B.I. Finally had carnitas! After failing to do so the last couple of days. I think the meat benefited from having sat in its cooking juice in the fridge for a few days, in the same way that a soup will often mellow and meld and be tastier the next day.
